Hi, busy bees! Today, I’m sharing my Baked Potato Recipe. Baked Potatoes are more than just a side dish, it’s a family tradition in our home. Whenever we have a special occasion or a simple family dinner, we always make sure to include baked potatoes on the menu.
My husband and daughter are always excited to help out with the preparation, and it’s one of the main reasons why I love cooking at home. 😍 They help me out in every step of the way like gathering all the ingredients we need: potatoes, milk, butter, cheese, sour cream, chives, and bacon bits. Then they help me wash the potatoes and poke them with a fork before rubbing them with olive oil and salt. Lastly, we wrap them in aluminum foil and place them in the oven.
While the potatoes are baking, we prepare the toppings. My daughter grates cheese and chops chives while I fry bacon until it’s crispy. We also place sour cream in a bowl and set it on the table with the other toppings.
When the potatoes are done, we scoop out the insides, leaving the skin, and mash them with butter and milk. Then, we add shredded cheese and scoop the mixture back into the potato skin, baking them again until the cheese has melted. I think this adds that delicious texture to make this dish even more scrumptious. 🥰
The result is a rich, creamy, and savory flavor with a slightly earthy and starchy taste from the potatoes, a rich and creamy texture from the butter, and a distinct nutty and sharp flavor from the cheddar cheese. The cheddar cheese also adds a nice gooey and melty texture to the dish. It’s a comforting and satisfying side dish for any meal. You simply must try this, it’s one of my favorite potato recipes! 🧀

- 4 large potatoes
- 4 tablespoons of butter
- 1/2 cup of milk
- 1 cup of grated cheddar cheese
- Optional: Sour cream, bacon bits, chives
Directions:
- Preheat your oven to 400°F (200°C).
- Poke the potatoes with a fork and bake them for about 45-50 minutes or until they are fork-tender. Once they are cool enough to handle, cut cooked potatoes in half lengthwise and scoop out the insides, leaving a thin layer of potato on the skins.
- In a medium mixing bowl, mash the scooped potato with butter and milk. Once the mixture is well combined, fold in the shredded cheese.
- Scoop the mixture back into the potato skins and bake for an additional 15-20 minutes or until the cheese is melted and bubbly.
- Serve the Twice Baked Potatoes warm as a side dish to any meal, or enjoy them as a satisfying snack.
