Blueberry Cheesecake Recipe: Berrylicious Heaven Dessert

Hello, busy bees! One summer evening, I decided to make my Blueberry Cheesecake Recipe for my family. It’s been awhile and since my daughter requested for it, I had to do it! So I’m sharing the recipe here so you can try it too. 😊

First, we gathered all the ingredients needed for the recipe, including cream cheese, granulated sugar, vanilla extract, and fresh blueberries. My husband helped by finding the perfect playlist to listen to while I baked.

Next, we made the cheesecake filling, and my daughter took turns mixing the ingredients with me. We both licked the batter off the spoons, and my husband sneaked a taste as well, making silly faces as if he’d never tasted anything so delicious. 😍

As we put the cheesecake in the oven, we set a timer and took a break to enjoy some blueberries together. I couldn’t resist sneaking a few more bites of the berries, and we all laughed as we tried to guess how the cheesecake would turn out. 😅

After dinner, we enjoyed the creamy and delicious cheesecake, memories of past summers flooded back. I remembered the times we picked fresh blueberries together, and how we would always end up with purple-stained fingers and laughter.

My daughter chimed in, recalling how we used to make blueberry jam together and how much she enjoyed fresh blueberries’ sweet and tart taste – I might actually share that recipe here too!  My husband added that this Blueberry Cheesecake Recipe reminded him of our trips to the farmer’s market, where we would buy baskets of blueberries to snack on.

Now, every summer, we make sure to pick fresh blueberries and use them to make one of our favorite dessert. A bite of this cheesecake will surely leave everyone wanting for more. The combination of the sweet and tangy blueberries with the creamy cheesecake filling is heaven on earth. Serve it with a dollop of whipped cream on top for an extra special treat. Give them a try, and let me know what you think in the comments below! Happy baking, busy bees! 🥰

Ingredients:

  • 1 (8 oz) package cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Directions:

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large mixing bowl, beat the cream cheese until smooth and creamy. Slowly add in the 1/2 cup granulated sugar and vanilla extract, and continue to beat until well combined.
  3. Gently fold in the blueberries into the cream cheese mixture. Pour the mixture into a greased 9-inch springform pan and smooth out the top.
  4. Bake the cheesecake for 25-30 minutes, or until the center is set. Turn off the oven and let the cheesecake cool inside for an hour.
  5. Remove the cheesecake from the oven and run a knife around the edges to loosen the cheesecake from the pan.
  6. Chill the cheesecake in the refrigerator for at least 2 hours before serving.

Enjoy! 😍
