I found myself standing in the kitchen, juggling work stuff and the desire to whip up something special for my fam. And then it hit me like a lightning bolt – it was my daughter’s birthday! Talk about a mix of excitement and mom guilt, right? 😅 I knew I had to make her day extra special, even if time was playing tricks on me. 😅

My daughter loves blueberry muffins! Those sweet little treats always made her eyes sparkle like stars. Without a second thought, I decided to surprise her with my homemade Blueberry Muffins Recipe made with loads of love. ❤

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup milk
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cups fresh or frozen blueberries

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, melt the butter and let it cool slightly. Then add the milk and vanilla extract, and stir until blended.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.
  5. Gently fold in the blueberries, making sure they are evenly distributed throughout the batter.
  6. Using a spoon or an ice cream scoop, fill each muffin cup about three-quarters full with the batter.
  7. Bake the muffins in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the muffins from the oven and let them cool in the pan for a few minutes. Then transfer them to a wire rack to cool completely.
