Ingredients:

  • 2 cups of all-purpose flour
  • 3 eggs
  • 3 cups of milk
  • 2 tablespoons of sugar
  • 1 teaspoon of vanilla extract
  • A pinch of salt
  • 2 cups of heavy cream
  • 1/2 cup of powdered sugar
  • Fresh berries (for garnish)

 

Instructions:

  1. To create the crepes, whisk together the flour, eggs, milk, sugar, vanilla extract, and salt until the batter is smooth. Heat a non-stick skillet over medium heat and pour a small amount of batter into the center. Swirl it around to coat the pan evenly. Cook for about a minute on each side or until lightly golden. Stack the crepes on a plate as you go.
  2. Whip the heavy cream and powdered sugar until stiff peaks form. This will be the luscious filling between the crepe layers.
  3. Place one crepe on a serving plate and spread a thin layer of whipped cream. Continue this process, stacking and spreading, until you’ve used all the crepes. The last layer should be a crepe.
  4. Use any remaining whipped cream to decorate the top. Add a generous amount of fresh berries for that extra ‘wow’ factor.
  5. Pop the cake into the refrigerator for a few hours. This allows the crepes and cream to meld together beautifully.
