To start with, I peeled and chopped the onions, carrots, and potatoes into bite-sized pieces. With the garlic minced and ginger grated, I was ready to infuse their flavors into the curry.

In a large pot, I heated some oil over medium heat. Once it was hot, I added the minced garlic and grated ginger, filling the kitchen with their enticing aroma. 🧄 Next, I tossed in the chopped onions, sautéing them until they turned translucent and slightly caramelized. 🧅

  • 2 cloves of garlic, minced
  • 2 tablespoons vegetable oil
  • 3 tablespoons Japanese curry roux
  • 4 cups (950ml) chicken or vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

 

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until fragrant and translucent.
  2. Add the protein of choice (chicken, beef, pork, or vegetables) to the pot, and cook until browned on all sides.
  3. Add the carrots and potatoes to the pot, and stir to combine with the other ingredients.
  4. Pour in the chicken or vegetable broth, and bring the mixture to a boil. Reduce the heat to a simmer and cover the pot. Let it cook for about 15-20 minutes, or until the vegetables are tender.
  5. Once the vegetables are cooked, add the Japanese curry roux to the pot. Stir well to ensure that the roux is completely dissolved.
  6. Add the soy sauce and Worcestershire sauce to the pot, and season with salt and pepper to taste. Stir to combine all the flavors.
  7. Simmer the curry for another 10-15 minutes, or until it thickens to your desired consistency. Stir occasionally to prevent sticking.
  8. Remove the pot from the heat and let the curry rest for a few minutes.
  9. Serve the Japanese Curry over a bed of cooked rice, and enjoy!
