Hello, busy bees! As a busy working mom, making an authentic Carbonara Recipe was ambitious. Although I had never attempted it before without the cream, I was determined to impress my family with my culinary skills. 😉

First of all, of course, I prepared all the ingredients, and as I cracked the eggs, my daughter asked if we were making scrambled eggs for dinner. 😅 She’s that curious when I’m cooking. 🥰 I laughed and explained that we were making an authentic Carbonara Recipe, a traditional Italian dish, so there shouldn’t be cream. Furthermore, as I whisked the eggs and grated the cheese, my husband offered to help with the bacon. I gladly accepted his offer, knowing that he was an excellent chopper.

FYI – I had to use bacon for this recipe since it’s the only thing we have available. 🥓

Once everything was ready, we combined the ingredients and cooked the pasta until it was perfectly al dente. Moreover, as I tossed everything together, I felt a sense of pride and excitement. I couldn’t wait to taste it!

As we sat down to eat, my daughter took a bite and exclaimed, “Mommy, this is delicious!” Hearing her compliments is one of my favorite parts about cooking for her. I hope, in a way, I make her fall in love with food and cooking too.

The carbonara was a hit, and we enjoyed a cozy family dinner together. I felt grateful for this moment and for the opportunity to create something special for my loved ones.

Cooking this pasta recipe may seem daunting, but with a little help from your family, it can be a fun and rewarding experience. So, don’t be afraid to try something new in the kitchen – you never know what delicious dish you might create! 🥰

  2. In a large skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove from heat.
  3. In a medium bowl, whisk together the eggs and grated parmesan cheese. Add a few tablespoons of the reserved pasta water and whisk to combine.
  4. Add the cooked spaghetti to the skillet with the bacon, and pour the egg mixture over it. Toss everything together until the sauce coats the spaghetti and becomes creamy. If the sauce is too thick, add more of the reserved pasta water.
