Every Christmas, she bakes a batch of Fruit Cakes as a present for our neighbors, friends, and family. That wonderful scent of freshly baked Fruit Cake was a reminder of the holiday season for me, coming from the oven. 🎄

Before you start, here’s a helpful tip: soak the fruits in brandy or orange juice a night before baking. Make sure to evenly spread the fruits throughout the batter to avoid clumping. This infuses the cake with a burst of rich flavors, making every bite amazing! 🍒

Ingredients:

  • 2 cups mixed dried fruits (apricots, figs, raisins, cherries)
  • 1 cup chopped nuts (walnuts, almonds)
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1/2 cup orange juice

 

Instructions:

  1. Preheat the oven to 325°F (165°C). Grease and line a loaf pan with parchment paper.
  2. Chop the dried fruits and nuts into smaller pieces.
  3. In a large bowl, beat butter and brown sugar until creamy. Add eggs one at a time, mixing well.
  4. In a separate bowl, whisk flour, baking powder, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the butter mixture. Stir in the dried fruits, nuts, and orange juice until combined.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
