Ingredients:
- 1 1/2 pounds boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 onion, finely diced
- 3 cloves garlic, minced
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/2 cup dry white wine
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- Fresh basil leaves, for garnish
Instructions:
- Season the chicken with salt and pepper. Dredge each piece in flour, shaking off any excess.
- Melt the olive oil and butter in a large skillet over medium heat. Don’t crowd the pan, cook the chicken in batches until golden brown. Set aside.
- In the same skillet, sauté the onion and garlic until softened. Add the oregano and thyme, letting them release their fragrance for a few seconds.
- Pour in the white wine and let it simmer for a minute, scraping up any browned bits. Then, add the chicken broth and bring to a boil.
- Reduce heat and stir in the heavy cream. Let it simmer for 5 minutes, until the sauce thickens slightly.
- Sprinkle in the Parmesan cheese and stir until melted and creamy. Add the chicken back to the pan and let it simmer for another 5 minutes, or until cooked through.
