Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mini marshmallows
  • 1/2 cup chocolate chips
  • Whipped cream (optional)

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
  3. Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan to create the crust. Set aside.
  4. In a separate mixing bowl, beat the cream cheese until it’s smooth and creamy.
  5. Add the granulated sugar and continue to beat until well combined.
  6. Beat in the eggs, one at a time, making sure each egg is fully incorporated before adding the next.
  7. Mix in the vanilla extract.
  8. Pour the cream cheese mixture over the prepared graham cracker crust in the springform pan.
  9. Sprinkle the mini marshmallows and chocolate chips evenly over the top of the cream cheese mixture.
  10. Place the cheesecake in the preheated oven and bake for about 35-40 minutes or until the edges are set but the center is slightly jiggly.
  11. Remove the cheesecake from the oven and let it cool in the pan for about 10 minutes.
  12. Run a knife around the edge of the pan to loosen the cheesecake.
  13. Allow the cheesecake to cool completely in the pan, then refrigerate it for at least 4 hours or overnight.
  14. Remove the cheesecake from the springform pan and place it on a serving plate.
  15. If desired, top with a generous dollop of whipped cream.
