- 6 egg yolks
- 1 cup granulated sugar
- 1 cup mascarpone cheese
- 1 3/4 cups heavy cream
- 1 cup strong brewed coffee, cooled
- 1/4 cup coffee liqueur (optional)
- 1 package ladyfingers (about 24)
- 2 tablespoons unsweetened cocoa powder
Instructions:
- In a large mixing bowl, whisk together the egg yolks and sugar until creamy and pale in color.
- Add the mascarpone cheese to the egg yolk mixture and whisk until well combined and smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until fully incorporated. Be careful not to overmix.
- In a shallow dish, combine the brewed coffee and coffee liqueur (if using).
- Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them too long to avoid sogginess.
- Layer half of the soaked ladyfingers in the bottom of a 9×9-inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers, creating an even layer.
- Repeat the layers with the remaining ladyfingers and mascarpone mixture.
